2 large carrots, peeled and cut into sticks

1 tablespoon olive oil

Salt and black pepper, to taste

1 cup homemade or store-bought hummus (preferably roasted garlic or classic flavor)

4 large whole wheat or spinach tortillas

1 cup baby spinach or mixed greens

½ cup cucumber, thinly sliced

¼ cup red bell pepper, thinly sliced

¼ cup feta cheese, crumbled (optional)

Juice of 1 lemon

Fresh herbs (like parsley or cilantro), for garnish

Roast the Carrots: Preheat your oven to 400°F (200°C). On a baking sheet lined with parchment paper, toss the carrot sticks with olive oil, salt, and black pepper. Spread them out in a single layer and roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.

    Prepare the Wraps: While the carrots are roasting, prepare your tortillas. Warm them in a dry skillet over medium heat for about 30 seconds on each side or until soft and pliable.
