Roasted Lemon Herb Cauliflower Steak

1 large head of cauliflower

1/4 cup olive oil

2 tablespoons fresh lemon juice

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cauliflower: Remove the green leaves from the cauliflower and cut the stem so it can stand upright. Slice the cauliflower into 1-inch thick steaks. You should be able to get about 3-4 good-sized steaks from a large head of cauliflower. The remaining florets can be used for another dish or roasted alongside the steaks.

      Make the Marinade: In a mixing bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, smoked paprika, salt, and pepper until well combined.

        Marinate the Cauliflower: Place the cauliflower steaks on the prepared baking sheet. Brush both sides generously with the marinade, ensuring they are well coated. Let them marinate for about 15-20 minutes, allowing the flavors to infuse.

          Roast the Cauliflower: Once marinated, roast the cauliflower in the preheated oven for about 20-25 minutes. Flip the steaks halfway through to ensure they brown evenly. They're done when they are tender and golden brown around the edges.

            Garnish and Serve: Remove the cauliflower steaks from the oven and let them cool slightly. Garnish with freshly chopped parsley and serve with lemon wedges on the side for an extra zesty kick.
