Roasted Tomato & Mozzarella Flatbreads

Ingredients
  

4 large flatbreads or naan

2 cups cherry tomatoes, halved

3 tablespoons olive oil, divided

1 teaspoon balsamic vinegar

Salt and pepper, to taste

2 teaspoons dried oregano

8 oz fresh mozzarella cheese, sliced

1 cup fresh basil leaves, roughly torn

1 tablespoon honey (optional)

Red pepper flakes (optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Tomatoes: In a mixing bowl, combine the halved cherry tomatoes with 2 tablespoons of olive oil, balsamic vinegar, salt, pepper, and dried oregano. Toss to coat the tomatoes evenly. Spread them out on a baking sheet in a single layer. Roast in the oven for about 20 minutes, until they are blistered and soft.

      Prepare the Flatbreads: While the tomatoes are roasting, place the flatbreads on another baking sheet. Drizzle the remaining 1 tablespoon of olive oil over the flatbreads, spreading it evenly. If using, drizzle a thin line of honey on top for a hint of sweetness.

        Add Mozzarella: Once the tomatoes are done roasting, remove them from the oven. Layer the slices of fresh mozzarella evenly over each flatbread.

          Combine Ingredients: Spoon the roasted tomatoes over the mozzarella. Make sure to distribute them evenly for balanced flavors.

            Bake the Flatbreads: Place the baking sheet with flatbreads in the oven (you can roast the tomatoes and bake the flatbreads at the same time if space allows). Bake for 12-15 minutes, or until the mozzarella is melted and bubbly and the edges of the flatbreads are golden.

              Garnish: Remove from the oven and let cool slightly. Sprinkle with fresh basil leaves and, if desired, red pepper flakes for some heat.
