Salmon Lettuce Wraps with Pineapple Glaze

For the Salmon:

1 lb fresh salmon fillet

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 tablespoon lime juice

For the Pineapple Glaze:

1 cup fresh pineapple, diced

1/4 cup brown sugar

1/4 cup soy sauce

1 tablespoon rice vinegar

1 teaspoon fresh ginger, minced

1 clove garlic, minced

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

For the Wraps:

8 large butter lettuce leaves

1/2 cup red bell pepper, thinly sliced

1/2 cup cucumber, julienned

1/4 cup red onion, thinly sliced

Fresh cilantro leaves for garnish

Lime wedges for serving

Instructions
 

Prepare the Salmon:

    - Preheat your grill or a skillet over medium heat.

      - In a small bowl, mix the olive oil, salt, pepper, garlic powder, smoked paprika, and lime juice. Brush this mixture over the salmon fillet.

        - Grill the salmon for about 5-6 minutes on each side, or until it flakes easily with a fork. Remove from heat and set aside to cool slightly.

          Make the Pineapple Glaze:

            - In a saucepan over medium heat, combine the diced pineapple, brown sugar, soy sauce, rice vinegar, minced ginger, and minced garlic. Stir well and bring to a simmer.

              - Allow the mixture to cook for about 5-7 minutes until the pineapple softens and the sauce thickens slightly.

                - Stir in the cornstarch-water mixture and cook for an additional 2 minutes until the glaze has thickened. Remove from heat and set aside.

                  Assemble the Wraps:

                    - Once the salmon is cool enough to handle, flake it into bite-sized pieces.

                      - Take a butter lettuce leaf and add a generous amount of the flaked salmon in the center. Top with red bell pepper, cucumber, and red onion.

                        - Drizzle with the pineapple glaze, and garnish with fresh cilantro leaves.

                          Serve:
