For the Salmon Skewers:

1 lb (450g) fresh salmon fillet, skin removed, cut into 1-inch cubes

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper, to taste

Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes)

For the Blueberry Salsa:

1 cup fresh blueberries, rinsed and drained

1 small red onion, finely diced

1 small jalapeño, seeds removed and finely diced (optional for a spicy kick)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon honey or maple syrup

Salt, to taste

Prepare the Marinade: In a medium bowl, combine olive oil, smoked paprika, garlic powder, dried oregano, salt, and pepper. Stir until well combined.

    Marinate the Salmon: Add the salmon cubes to the bowl and toss gently to ensure each piece is coated in the marinade. Let marinate for at least 15 minutes while you prepare the salsa.
