Salmon Skewers with Pineapple Salsa

For the Salmon Skewers:

1 lb fresh salmon fillet, skin removed and cut into 1-inch cubes

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon soy sauce

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

For the Pineapple Salsa:

1 cup fresh pineapple, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 jalapeño, seeds removed and finely chopped (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Prepare the Marinade: In a medium bowl, combine the olive oil, honey, soy sauce, garlic powder, smoked paprika, salt, and black pepper. Mix well to create a marinade.

    Marinate the Salmon: Place the salmon cubes into the marinade, ensuring they're well-coated. Cover the bowl with plastic wrap and let it marinate in the fridge for at least 30 minutes.

      Make the Pineapple Salsa: While the salmon is marinating, prepare the salsa. In a separate bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño (if using), and cilantro. Squeeze the lime juice over the mixture and add a pinch of salt. Stir gently to combine. Taste and adjust seasoning as desired. Set aside.

        Assemble the Skewers: Preheat your grill to medium-high. Thread the marinated salmon onto the skewers, about 4-5 pieces per skewer.

          Grill the Skewers: Place the skewers on the preheated grill and cook for about 3-4 minutes on each side, or until the salmon is cooked through and has nice grill marks. Be careful not to overcook, as salmon can dry out quickly.

            Serve: Once done, remove the skewers from the grill and let them rest for a minute. Serve the salmon skewers hot with a generous spoonful of pineapple salsa on top or on the side for dipping.
