Sausage & Pepper Skillet Pasta

8 oz (225g) pasta (penne or rigatoni)

1 lb (450g) Italian sausage (sweet or spicy, casing removed)

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 medium onion, thinly sliced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

1 cup low-sodium chicken broth

1 tsp dried oregano

1 tsp crushed red pepper flakes (adjust to taste)

2 tbsp olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Instructions
 

Cook the pasta: In a large pot of boiling salted water, cook the pasta according to package directions until al dente. Drain and set aside.

    Cook the sausage: In a large skillet over medium heat, add the olive oil. Once hot, crumble the Italian sausage into the skillet. Cook for about 5-7 minutes, stirring occasionally, until browned and cooked through. Transfer sausage to a plate and set aside.

      Sauté the vegetables: In the same skillet, add the sliced onions and bell peppers. Sauté for about 4-5 minutes until they begin to soften. Add the minced garlic and cook for an additional minute until fragrant.

        Combine ingredients: Return the browned sausage to the skillet. Pour in the diced tomatoes (with juices), chicken broth, oregano, crushed red pepper flakes, salt, and pepper. Stir to combine and bring to a simmer.

          Mix in pasta: Once the mixture is bubbly, add the cooked pasta to the skillet. Gently toss everything together to coat the pasta in the sauce. Let it cook for an extra 2-3 minutes to heat through.

            Serve: Serve the Sausage & Pepper Pasta hot, garnished with fresh basil and grated Parmesan cheese.
