2 cups vegetable broth (or water)

1 cup fresh spinach, roughly chopped

1 large egg

1 tablespoon olive oil

1/4 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional)

2 tablespoons grated Parmesan cheese (optional)

Fresh herbs (like parsley or chives) for garnish

Instructions
 

Prepare the Oatmeal:

    - In a medium saucepan, bring the vegetable broth (or water) to a boil over medium heat.

      - Add the rolled oats and a pinch of salt. Reduce the heat to low and simmer for about 5-7 minutes, stirring occasionally, until the oats are creamy and have absorbed most of the liquid.

        Cook the Spinach:

          - While the oats are cooking, heat the olive oil in a small skillet over medium heat.

            - Add the chopped spinach and sauté for about 2-3 minutes until wilted. Season with garlic powder, salt, and pepper. If you like a bit of heat, add red pepper flakes. Remove from heat and set aside.
