4 large russet potatoes, diced into 1-inch cubes

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth

2 cups sharp cheddar cheese, grated (plus extra for garnish)

1 cup heavy cream

1/2 cup whole milk

1/4 cup butter

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Chopped green onions, for garnish

Crumbled crispy bacon (optional), for garnish

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Stir in the minced garlic and cook for another minute, until fragrant.

    Cook Potatoes: Add the diced potatoes to the pot and stir to combine. Pour in the broth and bring it to a gentle boil. Season with salt, pepper, dried thyme, and smoked paprika. Reduce heat to a simmer and cook for 15-20 minutes, or until the potatoes are tender.

      Blend Soup: Using an immersion blender, carefully blend the soup until smooth and creamy. If you don’t have one, transfer the soup in batches to a regular blender, being cautious of hot liquids, and blend until smooth.

        Add Dairy: Return the blended soup to the pot on low heat. Stir in the heavy cream and whole milk. Gradually add the grated cheddar cheese while stirring until it melts and combines into the soup.

          Adjust Seasoning: Taste the soup and adjust the seasoning with more salt and pepper if needed. If the soup is too thick, you can add more milk or broth to reach your desired consistency.
