Savory Mushroom and Swiss Sliders

1 pound ground beef (or ground chicken/turkey for a lighter option)

1 cup finely chopped mushrooms (cremini or button)

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon soy sauce

Salt and pepper, to taste

8 slices Swiss cheese

12 slider buns (mini brioche or white)

2 tablespoons olive oil

Fresh arugula or spinach, for topping

Dijon mustard, for serving

Prepare the Mushroom Mixture: In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped onions and sauté until translucent, about 3-4 minutes. Add the minced garlic and chopped mushrooms. Cook until mushrooms release their moisture and become golden brown, about 5-7 minutes. Remove from heat and let cool slightly.

    Make the Patties: In a large bowl, combine the ground beef (or chosen alternative), cooled mushroom mixture, Worcestershire sauce, soy sauce, salt, and pepper. Mix until just combined. Form into 12 small patties.

      Cook the Patties: In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat. Cook the patties for about 3-4 minutes on each side, or until they reach your desired level of doneness. In the last minute of cooking, place a slice of Swiss cheese on top of each patty and cover the skillet with a lid to melt the cheese.

        Toast the Buns: While the patties are cooking, you can toast the slider buns on a separate skillet or in the oven until lightly golden.

          Assemble the Sliders: On the bottom half of each toasted bun, place a patty topped with melted Swiss cheese. Add a small handful of fresh arugula or spinach and a spread of Dijon mustard. Finally, top with the other half of the bun.

            Serve and Enjoy: Serve the sliders warm with your favorite side, such as sweet potato fries or a light salad.
