2 medium zucchinis (about 1 lb), grated

1 teaspoon salt

1/2 cup all-purpose flour

1/2 cup feta cheese, crumbled

1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)

2 large eggs

2 cloves garlic, minced

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for heat)

3 tablespoons olive oil (for frying)

Sour cream or yogurt (for serving)

Prepare Zucchini: In a bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out moisture. After 10 minutes, strain the zucchini using a clean kitchen towel or cheesecloth, pressing out as much liquid as possible.

    Mix Ingredients: In a large mixing bowl, combine the drained zucchini, flour, feta cheese, dill, eggs, minced garlic, black pepper, and cayenne pepper. Stir until well mixed.

      Heat Oil: In a large skillet, heat 2 tablespoons of olive oil over medium heat. You want the pan to be hot enough to sizzle when you add the batter.
