Ingredients

For the Shrimp:

1 pound shrimp, peeled and deveined

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon lime juice

For the Pineapple Slaw:

2 cups green cabbage, finely shredded

1 cup pineapple, diced

1/2 red bell pepper, sliced thin

1/4 cup red onion, finely chopped

1/4 cup cilantro, chopped

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

For Assembly:

8 small corn or flour tortillas

Lime wedges (for serving)

Extra cilantro (for garnish)

Instructions

Marinate the Shrimp: In a large bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, pepper, and lime juice. Add the shrimp, toss to coat, and let marinate for 15-20 minutes.

Prepare the Pineapple Slaw: In another bowl, mix together the cabbage, pineapple, red bell pepper, red onion, and cilantro. In a small bowl, whisk together the apple cider vinegar, honey, salt, and pepper. Pour the dressing over the slaw mixture and toss until well combined. Set aside.

Cook the Shrimp: Heat a skillet over medium-high heat. Once hot, add the marinated shrimp and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat.

Warm the Tortillas: In a dry skillet or directly over a gas flame, warm the tortillas for about 30 seconds on each side until soft and pliable.

Assemble the Tacos: To assemble, place a few shrimp in the center of each tortilla. Top with a generous amount of pineapple slaw, add extra cilantro if desired, and squeeze fresh lime juice over the top.

Serve: Arrange the tacos on a platter with lime wedges on the side for extra zest. Enjoy your tropical shrimp fiesta!
