1 can (15 oz) black beans, drained and rinsed

1 can (28 oz) crushed tomatoes

1 red bell pepper, diced

1 green bell pepper, diced

1 medium onion, diced

2 cloves garlic, minced

2 cups beef broth

2 tablespoons chili powder

1 tablespoon smoked paprika

1 teaspoon cumin

1 teaspoon dried oregano

Salt and black pepper to taste

1 cup sliced pepperoni

1 cup diced smoked sausage (e.g., andouille or kielbasa)

1 cup shredded cheddar cheese (for topping)

1 cup sliced olives (for topping)

½ cup thinly sliced green onions (for garnish)

Sour cream (for serving)

Fresh cilantro (for garnish, optional)

Instructions

Brown the meat: In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat and transfer the meat to the slow cooker.

Add vegetables: To the slow cooker, add the diced red and green bell peppers, onion, and minced garlic. Stir to combine.

Combine liquids: Pour in the crushed tomatoes and beef broth, followed by the kidney beans and black beans. Mix well.

Season the chili: Add chili powder, smoked paprika, cumin, oregano, salt, and black pepper to the mixture. Stir until all ingredients are evenly coated with spices.

Incorporate charcuterie elements: Gently fold in the sliced pepperoni and diced smoked sausage, ensuring they are well-distributed throughout the chili.

Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, allowing the flavors to meld beautifully.

Serve: Once cooked, ladle the chili into bowls and top with shredded cheddar cheese, sliced olives, and green onions. Add a dollop of sour cream and garnish with fresh cilantro, if desired.
