Slow Cooker Sweet Tangy Meatballs

1 pound ground beef (or ground turkey)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 large egg

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1 cup barbecue sauce (preferably sweet and tangy)

1/4 cup honey

1 tablespoon apple cider vinegar

1 tablespoon soy sauce (optional, for added umami)

Sliced green onions, for garnish (optional)

Instructions
 

Prepare Meatballs: In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, onion powder, salt, and black pepper. Mix until all ingredients are well incorporated.

    Form Meatballs: Roll the meat mixture into meatballs, about 1 inch in diameter. You should get approximately 20 meatballs.

      Prepare Sauce: In a separate bowl, whisk together the barbecue sauce, honey, apple cider vinegar, and soy sauce (if using).

        Combine in Slow Cooker: Place the meatballs in the slow cooker and pour the sauce over them. Make sure all meatballs are covered with sauce.

          Cook: Set the slow cooker to low and cook for 6-8 hours, or on high for 3-4 hours, until the meatballs are cooked through and tender.

            Serve: Once cooked, carefully stir the meatballs to coat them in the sauce. Serve hot, garnished with sliced green onions if desired.
