Spicy Baked Cauliflower Nuggets

1 medium head of cauliflower, cut into bite-sized florets

1 cup breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese (or nutritional yeast for vegan)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs (or 1/4 cup unsweetened applesauce for vegan)

1/4 cup hot sauce (your favorite brand)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cauliflower: In a large pot of boiling water, blanch the cauliflower florets for 2-3 minutes until slightly tender but still crisp. Drain and let them cool for a few minutes.

      Mix the Coating: In a mixing bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to incorporate all the spices evenly.

        Prepare the Egg Mixture: In another bowl, whisk together the eggs (or applesauce) and hot sauce until combined.

          Coat the Cauliflower: Dip each cauliflower floret into the egg mixture, allowing any excess to drip off, then roll it in the breadcrumb mixture, ensuring it's fully coated. Place the coated florets on the prepared baking sheet, spacing them about an inch apart.

            Drizzle with Olive Oil: Lightly spray or drizzle the coated cauliflower with olive oil to help them crisp up while baking.

              Bake: Bake in the preheated oven for 25-30 minutes, turning the cauliflower nuggets halfway through the cooking time, until they are golden brown and crispy.

                Garnish & Serve: Remove from the oven, sprinkle with fresh parsley, and serve the spicy baked cauliflower nuggets hot with extra hot sauce or your favorite dipping sauce.
