4 boneless, skinless chicken breasts

2 medium zucchinis, sliced into half-moons

1 red bell pepper, diced

1 yellow onion, diced

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 tablespoon Cajun seasoning (adjust to taste)

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon salt

½ teaspoon black pepper

¼ teaspoon cayenne pepper (optional, for extra kick)

2 tablespoons olive oil

1 cup shredded mozzarella cheese

Fresh parsley or cilantro, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Chicken: Season the chicken breasts with Cajun seasoning, smoked paprika, oregano, salt, black pepper, and cayenne pepper (if using). Make sure each breast is coated evenly.

      Sauté Vegetables: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, sauté until fragrant and onions are translucent, about 3-4 minutes.

        Cook Zucchini & Pepper: Add the sliced zucchini and diced red bell pepper to the skillet. Sauté for another 5-7 minutes until they start to soften. Stir in the halved cherry tomatoes, and cook for an additional 2 minutes. Remove from heat.

          Layer Ingredients: In a large baking dish, spread the sautéed vegetable mixture evenly on the bottom. Place the seasoned chicken breasts on top of the vegetables.

            Bake the Dish: Cover the baking dish with aluminum foil and place in the preheated oven. Bake for 25 minutes.

              Add Cheese: After 25 minutes, remove the foil and sprinkle the shredded mozzarella cheese over the chicken. Return the dish to the oven (uncovered) and bake for an additional 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is bubbly and golden.

                Garnish & Serve: Remove from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley or cilantro before serving.
