1/2 cup diced bell peppers (red and green for color)

1/4 cup diced onion

1/2 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon chili powder

1/4 teaspoon cayenne pepper (adjust for spice level)

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons milk

1/2 cup shredded cheddar cheese

4 English muffins, split and toasted

4 slices of cooked bacon or sausage patties (optional)

Fresh cilantro or parsley for garnish

Hot sauce (optional, for extra spice)

Instructions
 

Preheat the oven: Set your oven to 350°F (175°C) to warm up while you prepare the egg mixture.

    Prepare the egg mixture: In a mixing bowl, whisk together the eggs, milk, garlic powder, paprika, chili powder, cayenne pepper, salt, and black pepper until well combined.

      Sauté the vegetables: In a frying pan over medium heat, add a splash of oil and sauté the diced bell peppers and onions for about 3-4 minutes, or until they are soft and aromatic. Remove from heat and let cool slightly.

        Combine: Fold the sautéed vegetables and shredded cheddar cheese into the egg mixture, ensuring even distribution.

          Bake the egg mixture: Pour the egg and vegetable mixture into a lightly greased muffin tin, filling each cup about two-thirds full. Bake in the preheated oven for 18-20 minutes, or until the egg muffins are set and slightly golden on top.

            Assemble the sandwiches: While the egg muffins are baking, toast the English muffins until golden brown. If using bacon or sausage patties, heat them up at this time.

              Build your sandwich: Once the egg muffins are done, let them cool for a few minutes before removing them from the tin. On the bottom half of each toasted muffin, place an egg muffin, followed by a slice of bacon or sausage (if using). Top with the other half of the muffin.
