Ingredients

4 ears of fresh corn, husked

1/2 cup mayonnaise

1/4 cup sour cream

1 tablespoon chili powder

1 teaspoon cayenne pepper (adjust for spice level)

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/4 teaspoon salt

Juice of 1 lime

1/2 cup crumbled feta cheese (optional)

Fresh cilantro, chopped (for garnish)

Instructions

Preheat your grill to medium-high heat (about 400°F).

Husk the corn and remove all silk strands. Rinse under cold water and pat dry with a towel.

In a medium bowl, combine the mayonnaise, sour cream, chili powder, cayenne pepper, garlic powder, smoked paprika, salt, and lime juice. Mix well until creamy and everything is combined.

Once the grill is ready, place the corn directly on the grill grates. Grill for about 10-15 minutes, turning occasionally until the kernels are tender and slightly charred.

Remove the corn from the grill and immediately slather the chili-lime mayo mixture generously over each ear of corn.

Sprinkle crumbled feta cheese on top for an extra burst of flavor, if desired.

Garnish with freshly chopped cilantro and an additional squeeze of lime if you like.

Serve hot and enjoy the spicy kick of your deliciously grilled corn on the cob!
