Spicy Watermelon Popsicles

4 cups seedless watermelon, cubed

1 tablespoon lime juice (freshly squeezed)

1-2 teaspoons honey or agave syrup (adjust to taste)

1 teaspoon Tajín seasoning (or chili powder for a different spice)

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Watermelon: Place the watermelon cubes in a blender or food processor. Blend until completely smooth, ensuring there are no lumps.

    Mix in Flavors: In a mixing bowl, combine the watermelon puree with lime juice, honey or agave syrup, Tajín seasoning, and a pinch of salt. Stir well to incorporate all ingredients and taste test. Adjust sweetness or spiciness to your preference.

      Pour and Fill Molds: Carefully pour the spicy watermelon mixture into popsicle molds, leaving some space at the top for expansion.

        Insert Sticks: If your molds come with sticks, insert them into the molds. If not, you can cover the molds with a piece of foil and poke a small slit in the center of each mold to hold the stick in place.

          Freeze: Place the molds in the freezer and let them freeze for at least 4-6 hours or until they are fully solid.

            Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and serve immediately. Garnish with fresh mint leaves if desired.
