For the Chicken Marinade:

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1/4 cup soy sauce

2 tablespoons honey

3 tablespoons rice vinegar

4 cloves garlic, minced

1 teaspoon ginger, grated

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust to taste)

For the Noodles:

8 oz (225g) rice noodles or soba noodles

2 tablespoons vegetable oil

1 bell pepper, thinly sliced

1 cup broccoli florets

1 carrot, julienned

1 green onion, sliced (for garnish)

Sesame seeds (for garnish)

For the Sauce:

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon oyster sauce

1 tablespoon water

Juice of 1 lime

Marinate the Chicken: In a medium bowl, combine the soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and red pepper flakes. Add the chicken pieces, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to overnight for deeper flavor.

    Cook the Noodles: Follow package instructions to cook the rice noodles. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

      Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken with all of the marinade. Stir-fry for about 7-10 minutes until the chicken is cooked through and slightly caramelized. Remove from skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Once hot, add the sliced bell pepper, broccoli florets, and julienned carrot. Stir-fry for about 5 minutes, or until the vegetables are tender but still crisp.

          Combine Everything: Lower the heat, and to the vegetable mixture, add the cooked noodles and chicken back into the skillet. In a small bowl, whisk together the soy sauce, hoisin sauce, oyster sauce, water, and lime juice. Pour this sauce over the noodle mixture and toss well to combine. Cook for another 2-3 minutes, allowing the noodles to absorb the sauce.
