12 oz. tri-color rotini pasta

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, torn or roughly chopped

1/4 cup extra virgin olive oil

2 tbsp balsamic vinegar

1 clove garlic, minced

Salt and pepper to taste

Optional: 1/4 cup pine nuts or walnuts, toasted

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the tri-color rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, and a pinch of salt and pepper until well combined. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, cherry tomatoes, mozzarella balls, and fresh basil. Pour the dressing over the top and gently toss until everything is well coated.
