1.5 lbs boneless, skinless chicken thighs

1 tablespoon olive oil

Salt and pepper, to taste

For the Teriyaki Sauce:

1/2 cup soy sauce (low-sodium for a healthier option)

1/4 cup honey

1/4 cup mirin (Japanese sweet rice wine)

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon cornstarch

2 tablespoons water

1 tablespoon sesame oil

For the Bowl:

2 cups jasmine rice (uncooked)

2 cups water or chicken broth

1 cup steamed broccoli florets

1 cup shredded carrots

1/2 cup edamame (shelled)

1/4 cup green onions, chopped

1 tablespoon sesame seeds (for garnish)

Pickled ginger (for serving, optional)

Instructions
 

Cook the Rice: Start by rinsing the jasmine rice under cold water until the water runs clear. In a pot, combine the rice and water (or chicken broth) and bring it to a boil. Once boiling, cover and reduce the heat to low, letting it simmer for about 15 minutes, or until cooked. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

    Prepare the Sauce: While the rice is cooking, whisk together the soy sauce, honey, mirin, garlic, and ginger in a small bowl. In another small bowl, mix the cornstarch and water, then add it to the soy sauce mixture. Heat the mixture in a saucepan over medium heat, stirring continuously until it thickens slightly (about 3-5 minutes). Remove from heat and stir in sesame oil. Set aside.

      Cook the Chicken: In a large skillet over medium-high heat, add the olive oil and allow it to heat up. Season the chicken thighs with salt and pepper, then add them to the skillet. Sear the chicken for about 5-7 minutes on each side, or until cooked through and golden brown.

        Glaze the Chicken: Reduce the heat to medium and pour the prepared teriyaki sauce over the chicken in the skillet. Cook for an additional 3-5 minutes, turning the chicken to evenly coat it with the sauce. Once the chicken is well-coated and the sauce is thickened, remove from heat.

          Assemble the Bowls: Slice the teriyaki chicken into strips. In serving bowls, layer a portion of jasmine rice, followed by steamed broccoli, shredded carrots, and edamame. Top with the sliced teriyaki chicken.

            Garnish: Sprinkle with chopped green onions and sesame seeds. Add pickled ginger on the side, if desired.
