1 cup creamy peanut butter (natural is best)

2 large ripe bananas

1 cup dark chocolate chips (or milk chocolate for a sweeter option)

2 tablespoons coconut oil (or any neutral oil)

1 tablespoon honey or maple syrup (optional, for added sweetness)

A pinch of sea salt

Mini muffin liners (or silicone molds)

Instructions
 

Prep the Bananas: Slice the ripe bananas into thin circles, about 1/4 inch thick. Set aside.

    Make the Peanut Butter Mixture: In a medium bowl, mix the peanut butter with a pinch of sea salt. If you prefer your filling sweeter, stir in honey or maple syrup until evenly combined.

      Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until completely melted and smooth.

        Prepare the Molds: Line a mini muffin tin with muffin liners or use silicone molds. Pour a small amount of the melted chocolate into each cup, just enough to cover the bottom (around 1 teaspoon), and spread it evenly.

          Add the Peanut Butter Layer: Spoon about 1 teaspoon of the peanut butter mixture on top of the chocolate layer in each mold. Use the back of a spoon to smooth it out slightly.

            Add the Banana Layer: Place one banana slice on top of each peanut butter layer, gently pressing down to secure them.

              Top with More Chocolate: Pour another layer of melted chocolate over the bananas in each cup, ensuring they are evenly covered. Tap the tin lightly on the counter to remove air bubbles and smooth out the surface.

                Chill in the Refrigerator: Place the muffin tin in the refrigerator and let the cups chill for at least 1-2 hours, or until the chocolate is fully set.

                  Serve: Once set, remove the peanut butter cups from the molds and peel off the liners. Serve immediately or store in an airtight container in the refrigerator for up to a week.
