2 medium sweet potatoes, peeled and diced

250g chorizo sausage, casings removed and crumbled

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp smoked paprika

½ tsp cumin

¼ tsp cayenne pepper (adjust for spice preference)

Salt and pepper to taste

6 small corn or flour tortillas

1 ripe avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Roast the Sweet Potatoes: Start by preheating your oven to 400°F (200°C). Toss the diced sweet potatoes with a drizzle of olive oil, salt, and pepper on a baking sheet. Roast in the oven for about 25-30 minutes or until they are golden brown and tender, flipping halfway through.

    Cook the Chorizo: While the sweet potatoes are roasting, heat a large skillet over medium heat. Add the crumbled chorizo and cook until it’s browned and starting to crisp, about 5-7 minutes. Remove excess fat if desired.

      Sauté Onions and Garlic: Add the chopped onion to the skillet with the chorizo and sauté for another 3-4 minutes, until the onion is soft. Stir in the minced garlic, smoked paprika, cumin, and cayenne pepper, cooking for an additional 1-2 minutes until fragrant.

        Combine Ingredients: Once the sweet potatoes are ready, add them to the chorizo mixture. Gently stir to combine, allowing them to warm together for another minute. Adjust seasoning with salt and pepper to taste.

          Warm the Tortillas: In a separate dry skillet, briefly warm the tortillas over medium heat for about 30 seconds on each side until they are pliable.

            Assemble the Tacos: Place a generous scoop of the sweet potato and chorizo mixture onto each tortilla. Top with slices of avocado, fresh cilantro, and a squeeze of lime juice.
