2 cups rolled oats

1 cup almond milk (or any milk of choice)

1 cup fresh raspberries (or frozen, thawed)

1/4 cup honey or maple syrup

1/4 cup almond butter (or peanut butter)

1/4 cup shredded coconut (unsweetened)

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup chopped nuts (optional for added crunch, such as walnuts or almonds)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, cinnamon, and salt. Stir well to evenly distribute the dry ingredients.

      Combine Wet Ingredients: In another bowl, whisk together the almond milk, honey (or maple syrup), almond butter, and vanilla extract until smooth and well combined.

        Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir until everything is evenly mixed.

          Add Raspberries: Gently fold in the fresh raspberries, being careful not to mash them too much. If using frozen raspberries, ensure they are well-drained before adding.

            Form Bites: Using your hands or a small cookie scoop, form small balls (about one inch in diameter) and place them on the prepared baking sheet. Leave space between each bite as they will expand slightly.

              Add Optional Nuts: If you'd like to add some crunch, sprinkle chopped nuts on top of each bite before baking.

                Bake: Place the baking sheet in the oven and bake for 15-18 minutes, or until the bites are golden brown and firm to the touch.

                  Cool: Once baked, remove from the oven and let the bites cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.

                    Serve or Store: Enjoy these delicious bites warm as a snack or breakfast alternative. They can be stored in an airtight container in the refrigerator for up to a week.
