4 medium sweet potatoes

1 lb ground turkey or beef

1 can (15 oz) black beans, rinsed and drained

1 cup corn (canned or frozen)

1 packet taco seasoning (or homemade taco seasoning)

1 cup salsa (mild or spicy, according to preference)

1 avocado, diced

1 cup shredded cheddar cheese (optional for topping)

½ cup Greek yogurt or sour cream (for drizzling, optional)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash and dry the sweet potatoes. Pierce them a few times with a fork, then rub them with a little olive oil and sprinkle with salt. Place the sweet potatoes on a baking sheet and bake for 45-50 minutes or until tender when pierced with a fork.

      Cook the Meat: While the sweet potatoes are baking, heat a large skillet over medium-high heat. Add a splash of olive oil, then add the ground turkey or beef. Season with salt and pepper, and cook until browned, breaking it up with a spatula (about 5-7 minutes).

        Add Flavor: Stir in the taco seasoning, black beans, corn, and salsa into the meat mixture. Reduce heat to low and simmer for another 5-10 minutes until everything is heated through and flavors are combined.
