Tofu Tacos with Lemon Slaw

For the Tofu:

1 block (14 oz) extra-firm tofu, drained and pressed

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon lime juice

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

For the Lemon Slaw:

2 cups green cabbage, finely shredded

1 cup purple cabbage, finely shredded

1 large carrot, julienned or grated

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

Juice of 1 large lemon

1 tablespoon honey or agave syrup

Salt and pepper to taste

For Assembling:

8 small corn or flour tortillas

Avocado slices (optional)

Fresh lime wedges (for serving)

Prepare the Tofu: Cut the pressed tofu into 1-inch cubes. In a bowl, mix olive oil, soy sauce, lime juice, cumin, smoked paprika, garlic powder, salt, and pepper. Add the tofu cubes, gently tossing to coat well. Let marinate for at least 15 minutes.

    Cook the Tofu: Heat a non-stick skillet over medium-high heat. Add the marinated tofu cubes in a single layer. Cook for 5-7 minutes on each side, or until golden brown and slightly crispy. Remove from heat and set aside.

      Make the Lemon Slaw: In a large bowl, combine the shredded green cabbage, purple cabbage, carrot, and cilantro. In a small separate bowl, whisk together olive oil, lemon juice, honey/agave syrup, salt, and pepper. Pour the dressing over the cabbage mixture and toss well to combine. Adjust seasoning as needed.

        Warm the Tortillas: Heat the tortillas on a dry skillet for about 30 seconds on each side until warm and pliable.

          Assemble the Tacos: Layer the crispy tofu on each tortilla. Top with a generous amount of lemon slaw. Add avocado slices if desired, and serve with fresh lime wedges on the side.
