1 pound ground turkey

1 cup uncooked brown rice

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

2 cups chicken broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon oregano

Salt and pepper, to taste

1 cup corn (fresh or frozen)

½ cup shredded cheese (cheddar or Monterey Jack)

Fresh cilantro or green onions, for garnish (optional)

Lime wedges, for serving (optional)

Instructions
 

Sauté the Aromatics: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

    Brown the Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Cook, breaking it apart with a spatula, until the turkey is browned and no longer pink, about 5-7 minutes. Season with salt, pepper, chili powder, cumin, paprika, and oregano.

      Add the Rice: Once the turkey is browned, stir in the uncooked brown rice, allowing it to toast slightly for about a minute. This step enhances the rice's flavor.

        Incorporate Liquids and Beans: Pour in the chicken broth, canned diced tomatoes (with their juices), and the black beans. Stir well to combine all ingredients.

          Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 30-35 minutes, or until the rice is fully cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.
