Ingredients

1 pound ground turkey

1 medium zucchini, grated and excess moisture squeezed out

1/2 cup breadcrumbs (or almond flour for a gluten-free option)

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)

Olive oil, for cooking

Burger buns and toppings of your choice (lettuce, tomato, avocado, etc.)

Instructions

Prepare the Zucchini: Start by grating the zucchini using a box grater or food processor. Once grated, place the zucchini in a clean kitchen towel or paper towel and twist to squeeze out as much moisture as possible. This step is crucial to avoid soggy burgers.

Mix Ingredients: In a large mixing bowl, combine the ground turkey, squeezed zucchini, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, paprika, salt, black pepper, red pepper flakes, and parsley.

Form Patties: Use your hands to gently mix until everything is well combined, being careful not to overwork the meat. Divide the mixture into four equal portions and shape them into patties, about 1-inch thick.

Chill the Patties: For best results, place the formed patties on a plate and refrigerate for about 30 minutes. This helps them hold their shape while cooking.

Cook the Burgers: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, add the patties. Cook for about 6-7 minutes on one side, then flip and cook for an additional 5-6 minutes on the other side, until cooked through and golden brown on the outside. The internal temperature should reach 165°F (75°C).

Serve: Remove the burgers from the skillet and let them rest for a few minutes. Serve on burger buns with your favorite toppings, such as lettuce, tomato, avocado, or a spicy mayo.
