Ingredients

1 medium zucchini (about 7-8 inches), grated

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg (optional)

1 large egg

1 teaspoon vanilla extract

1/4 cup milk

Vegetable oil for frying

1/2 cup sugar (for coating)

1 teaspoon cinnamon (for coating)

Instructions

Prepare the Zucchini: Start by grating the zucchini using a fine grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This step is crucial to prevent the churros from becoming soggy.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg (if using). Whisk them together until well combined.

Combine Wet Ingredients: In another bowl, beat the egg and then add the vanilla extract and milk. Mix well.

Combine Mixtures: Gradually add the wet ingredient mixture to the dry ingredients, stirring until just combined. Fold in the grated zucchini until evenly distributed throughout the batter.

Prepare for Frying: Heat about 2 inches of vegetable oil in a deep pan or skillet over medium heat. To test if the oil is ready, drop a small piece of dough into the oil; if it sizzles and rises to the surface, the oil is hot enough.

Pipe the Churros: Transfer the churro batter into a piping bag fitted with a large star tip. Once the oil is hot, carefully pipe strips of dough (about 4-5 inches long) into the hot oil. Fry in batches, making sure not to overcrowd the pan.

Fry Until Golden: Fry the churros for about 2-3 minutes on each side or until they are golden brown and cooked through. Use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to drain excess oil.

Coat the Churros: In a shallow dish, mix together 1/2 cup of sugar and 1 teaspoon of cinnamon. While the churros are still warm, roll them in the cinnamon sugar mixture until well coated.

Serve: Serve your zucchini churros warm with a side of chocolate sauce or caramel for dipping. Enjoy your deliciously unique treat!
