2 cups grated zucchini (about 2 medium zucchinis)

1 cup rolled oats

1 cup all-purpose flour (or whole wheat flour for a healthier option)

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup unsweetened applesauce

1/2 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips or raisins (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch casserole dish or line it with parchment paper for easier serving.

    Prepare the Zucchini: In a clean dish towel, squeeze out excess moisture from the grated zucchini. This will prevent the casserole from getting too watery.

      Mix Wet Ingredients: In a large mixing bowl, combine the grated zucchini, applesauce, vegetable oil, eggs, and vanilla extract. Mix well until everything is thoroughly combined.

        Sift Dry Ingredients: In a separate bowl, whisk together the flour, oats, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

          Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently to combine. If you’re using walnuts or chocolate chips, fold them in at this point.

            Transfer to Dish: Pour the mixture into the prepared casserole dish, spreading it evenly with a spatula.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
