2 medium zucchinis, grated

1 cup sweet corn kernels (fresh or frozen)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika (optional for a smoky flavor)

1 large egg

1/4 cup green onions, finely chopped

1/4 cup fresh parsley, chopped

3 tablespoons grated Parmesan cheese (optional)

Olive oil or vegetable oil for frying

Prep the Zucchini: Grate the zucchinis using a grater or food processor. Place them in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This is essential to prevent soggy fritters.

    Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, baking soda, salt, black pepper, and smoked paprika. Mix well to evenly distribute the dry ingredients.

      Combine Wet Ingredients: In a separate bowl, beat the egg. Add the grated zucchini, sweet corn, green onions, parsley, and Parmesan cheese (if using). Mix until well combined.

        Combine Everything: Gradually add the wet mixture to the dry ingredients. Stir gently until just combined; be careful not to overmix as it can make the fritters tough.

          Heat the Pan: In a large skillet, heat 2-3 tablespoons of oil over medium heat. You want the oil hot enough that a small drop of batter sizzles when added.

            Form Fritters: Drop spoonfuls of the batter onto the skillet, flattening them slightly to form fritters. Typically, 2-3 fritters can be cooked at a time, depending on your skillet size.

              Cook Until Golden: Fry the fritters for about 3-4 minutes on one side, or until golden brown. Flip gently and cook for another 2-3 minutes on the other side. Adjust the heat if necessary to avoid burning.

                Drain: Once cooked, transfer the fritters to a paper towel-lined plate to drain any excess oil.
