2 large zucchinis

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or canned)

1 cup cherry tomatoes, halved

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1 jalapeño, thinly sliced (optional)

1/4 cup fresh cilantro, chopped (for garnish)

1 avocado, sliced (for topping)

Salsa or pico de gallo (for serving)

Sour cream or Greek yogurt (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Zucchini: Wash the zucchinis and slice them into thin rounds, approximately 1/4 inch thick. You can also slice them lengthwise for a different presentation.

      Season the Zucchini: In a large bowl, combine the zucchini slices with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss until all slices are well coated.

        Arrange on Baking Sheet: Lay the seasoned zucchini slices on a baking sheet lined with parchment paper in a single layer. Bake in the preheated oven for 15 minutes, flipping halfway through until they are tender and slightly crispy.

          Layer the Nachos: Remove the zucchini from the oven. On the same baking sheet, arrange the zucchini slices to form a base. Layer the black beans, corn, cherry tomatoes, and jalapeño slices evenly over the zucchini. Sprinkle the shredded cheese generously on top.
