2 large zucchinis

1 cup marinara sauce (or homemade tomato sauce)

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup assorted toppings (pepperoni, bell peppers, olives, mushrooms, spinach, etc.)

1 teaspoon Italian seasoning

½ teaspoon garlic powder

Olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Zucchini: Wash the zucchinis and slice them in half lengthwise. Use a spoon to scoop out some of the center to create a small well for the toppings. This will help prevent excess moisture.

      Season the Zucchini Boats: Drizzle the cut sides of the zucchini with olive oil, then sprinkle with salt, pepper, garlic powder, and Italian seasoning for added flavor.

        Bake the Zucchini: Place the zucchini halves cut-side up on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15 minutes, until they soften slightly.

          Add the Sauce and Cheese: Remove the zucchini from the oven, and spoon marinara sauce generously into each zucchini half. Sprinkle with mozzarella cheese and then with Parmesan cheese.

            Add Toppings: Get creative! Add your choice of toppings evenly over each zucchini boat.

              Final Bake: Return the zucchini pizzas to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly, and the edges of the zucchini are just starting to brown.

                Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Slice and serve warm.
